I know that quite a few guys here use Dolby Audtition for music creation which also has a facility for producing .AC3 format files (Dolby Surround Sound). I don't know how many actually produce 5.1 surround files but here's some lead into doing so particularly in Adobe. I use the 5.1 AC3 system inherent in Sony Acid and Sony Vegas for visual stuff because I prefer the format however you may want to try in Adobe.
Obviously you need a surround sound system for playback. I've a lovely Altec Lansing remote control system for 5 channel PC output practicaly brand new if anyone's interested.
